(Yes, they have a gluten-free version of the shell, as well.)I'm a cannoli fan and this is the best I've had around the world, including Italy (have not been to Sicily yet).The nougat is par excellence, as well—chock full of fresh nuts held together by soft, chewy, tasty nougat that's not too sweet.The caramelized nuts are superb, as well. We bought 3 varieties, and the peanuts, so far are fantastic.Google Maps pins them at Leith Links, but they're (currently) also at Grassmarket and Stockbridge Market on weekends.LONG VERSIONBeing a cannoli fan, I try to sample cannoli everywhere I travel where I can find a Sicilian bakery. Often, the shells aren't fresh, so they've lost their crunch. I also find the filling, at least in America, is way too sweet—I'm looking at you NYC. Compared to cannoli I've had in Venice, Milan, and Rome, their cannoli still stands above the ones I've sampled there.They have 2 variations, one filled with pistachio cream and another filled with hazelnut cream. The shells…crispy, crunchy, freshly made goodness that crackles at each bite, giving away to the pillowy ricotta filling. The filling just presents as sweet enough to be part of the composition, but never rising above any of the other notes.A critical point (besides the ingredients and craft) that separates them from other Italian bakeries, is that they don't pre-fill several cannoli, because the cream leeches moisture into the shell and softens the shell. It's why at most bakeries when they present several behind the glass, you can expect that it's unlikely that you'll get a proper crisp cannoli. Here, they make a couple so people who walk by can see that they have cannoli and place them on a stack of shells, and, from what I observed, those don't last long as they get scooped up. Take note that they import key ingredients from Sicily to be able to produce cannoli of the highest quality.We picked up a triple bag order of caramelized nuts… caramelized hazelnuts, caramelized peanuts, and caramelized sweet

These guys are seriously good. I'm Italian so I've tried my fair share of cannoli and theirs are to die for! They also have a selection of nougat, brittle, sugar coated nuts and other delights. Highly recommended, what a gem!
