Would 100% recommend this experience!! From start to finish Paul was an amazing host and the afternoon was full of laughs. You get a background of the gin and the company itself, which is all very interesting and we left telling our friends and family everything we had learnt about gin and the botanicals. You get complete freedom when making your own gin, however Paul is so helpful and will guide you on the measurements of the different flavours. You also get plenty of drinks to try throughout and everything we tried was so nice and we will soon be ordering a few bottles! Overall, the afternoon was such a great memory and we cannot wait to open our gin bottle in the next coming weeks.

We were given this Gin Academy experience at the Defiance distillery as a gift. We went along on Saturday afternoon, 3rd June 2023, not really knowing what to expect but spent a lovely couple of hours with Paul.The distillery is also a lovely little 30 seater bar (can be hired) which is open for bookings on various Friday evenings. Lots of little sample tots of various gin and rum products and also 3 gin cocktails, which were all delicious! A tasty Tapas lunch was also provided.We distilled our own bottle of gin (with Paul's help) which I can say after sampling this week is gorgeous!Thanks very much Paul for making us welcome and sharing your great knowledge and enthusiasm with us.The experience was thoroughly enjoyable and would definitely recommend!

We were bought the experience as a gift, and what a great find. Had an excellent afternoon at the distillery, made our own gin and had own brand drinks and a charcuterie board too. Paul made us feel extremely welcome and his knowledge and advice was excellent. He's moving to Rochdale in the summer, and we will definitely visit again in the new premises. What a lovely day.

We were gifted the gin experience from friends and what an amazing afternoon it was. We keep looking back at the photos we took and thinking of when we can do it again. Set in an old mill on the edge of Saddleworth the distillery was immaculate and Paul created a warm and welcoming atmosphere which was both fun and interesting. His knowledge and passion for spirits really shon through and the products they create are fabulous. At the end of the afternoon we came away with our own gin and great memories. Highly recommended, if you see this experience online go for it you won’t be disappointed. AAA+

Attended the gin making experience today and I was very impressed. Loved the set up, the 3 large gins, other small gin samples and the snack board which was included. Paul the owner was a great host and made the gin making experience really fun and interesting. Looking forward to enjoying my personalised bottle of gin. Would definitely recommend.

Had the pleasure of taking part in a Saturday afternoon gin making session. Really informative and relaxed. The wonderful gins and mezze platters a bonus. Highly recommend.

Excellent afternoon attending the Gin academy.Paul was super knowledgeable, and delivered and excellent experience. Drinks were top notch and the gin we made came out pretty great !Food was excellent and lots of free samples throughout the afternoon.Well worth a visit!

Had a fantastic afternoon at the Defiance Distillery. Great drinks, great nibbles and great company. Paul instantly put us at ease and opened up a whole new world of gin tastes to us. His passion for gin making oozes out and his knowledge is incredible. I absolutely recommend this experience to everyone and can't wait to see Paul's future endeavours. I may become a regular! Brilliant find! This was an experience voucher and so glad we chose this. Paul is an expert and produces amazing gins. His knowledge and guidance whilst we made our personal gin was exceptional. The ambience was great, it was done at an easy pace, the food and drinks were perfect. I cannot recommend this experience highly enough. Book direct with Paul at Defiance for a better rate too. If you like gin, you will love this afternoon of indulgence.

We had a great time on the Gin Making experience recently.We had been previously for the tour but this was a lot more fun and hands on.I can honestly say we were never without a drink and the food board we had whilst our unique gin was in the “still” was very enjoyable.We got to sample many of the other peoples gin efforts on the day, amazing how all 6 gins made on the day were so different yet easy to drink, you also get to take home what you make, which takes 3 days to settle down, it does taste very nice now as it did on the day.Paul is a very good host and as well as being very informative he has many stories to keep you entertained, I would recommend this experience to anyone, it was a very good way to spend a Saturday afternoon……
